Can you believe it!? Summer is right around the corner!!! Summer time calls for bbq’s, pool parties, holiday parties– O my!
So in honor of these upcoming fab parties- I thought it would be fun to post a few of my fav sides/appetizers to serve or bring to a shin-dig. Would love to hear what your favs are too!
–Buffalo Chicken Dip
WARNING: this dip is super addicting but highly delicious!
- 2 cups canned or shredded cooked chicken
- 1 (8 oz. pkg.) cream cheese, softened
- 1/2 cup FRANK’S RedHot or favorite buffalo wing sauce
- 1/2 cup ranch dressing
- 1/2 cup crumbled bleu cheese or your favorite shredded cheese
PREHEAT oven to 350°F.
COMBINE all ingredients and spoon into shallow 1-quart baking dish.
BAKE 20 minutes or until mixture is heated through; stir. Serve with celery, cracker or chips!
-Guacamole
I don’t typically use a recipe for this- just kinda throw it together- but for the sake of this post I will attempt one.
- 4- 5 avocados
- 2 chopped tomatoes
- 1 chopped white onion
- sm can crushed pineapple (drained) – inspired by the amazing guac at Gallo Blanco in Phoenix! Yum!!
- Cilantro
- Minced Garlic
- Salt
- Jalapeno (optional)
Mix it all together!
Stuffed Strawberries
Delish and super cute!! Cute food just tastes better, right!?
I had a great helper!
- Fresh Strawberries –hulled & cored ( I also like to cut the tip of the berry so they stand up better)
- 8 oz cream cheese (softened)
- 1-2 c of cool whip
- ½ c powdered sugar
- ½ tsp vanilla
beat cream cheese, powdered sugar & vanilla together until smooth, stir in cool whip. Use a pasty bag or a resealable bag with corner snipped
Fill strawberries.
Optional: sprinkle graham cracker crumbs on top or top with a blueberry for a lil’ patriotic touch!
